Had a home made breakfast Sammie this morning.

Egg bacon and havarti on an English muffin. It was delicious.

How to dress it or how to fry it? I’m not a big fan of New Orleans style po boy bread unless fresh cause it will dry out when re heated and choke ya. I like heavier bread. Nice crunch on outside but soft middle. Dig out a little of inside to make a boat. Dress it then shrimp. People over cook shrimp. You fry it until just crispy. I’ll marinate shrimp in some hot sauce then straight into a yellow flower season with salt, pepper, garlic powder, onion powder and my own creole seasoning. If buying creole seasoning, slap ya mamas is the best in the market. Great flavor without the massive amount of salt. Tony’s is way to salty. I just take the shrimp from hot sauce straight into the yellow flower. Shake off excess. Drop in a 350 to 375 fryer until golden brown. May sprinkle with some salt if needed right out of the flour. Drain it and put on the dressed bread. Enjoy

No fancy food photography tonight boyos. I'm too hungry to go through all that effort tonight.

Made some 1" (plus) bone in pork chops:


Cooked them hot side for like 3 mins, and then moved to cool side until I got them up to 145-150. Covered and rested. Seasoned with fresh ground sea salt, pepper and rosemary. I just barely got these done before it started to pour.

Also made some roasted asparagus in the oven. Trimmed the woody ends off, tossed in olive oil, salt and pepper. Arranged in a single layer on a foil lined baking sheet, topped with fresh grated parm and baked for like 12 mins at 450. Served with fresh lemon slices.

Also made some lemon herb rice on the side.

Thanks for reminding me.. I have asparagus (store bought) that needs to get used as well.

I cannot wait to get some Illinois corn on the cob. So much better than the chit we get down here.

I am in the old west town of El Paso, tending to some inlaw emergencies, and so you gotta have some carnitas de vapor tacos with homemade salsa. Alright, not exact New Mexican cuisine, but I'll take what I can get living in the southeast.

I love asparagus.

Couple weeks ago I had a driver at my job give me some corn on the cob he made and it was the most tender corn on the cob I've ever had in my life. I never had corn melt in my mouth, it was fucking amazing.
