Lol.

I do agree though that the "fresh" pasta at the store is way better than the dry stuff. I'm way too lazy to roll my own pasta in most circumstances. I make a cold tortellini pasta salad often, and that stuff is pretty money with minimal effort.

Warm, hearty, and the real beauty of this dish is that I basically spend all morning and afternoon drinking in the kitchen with the excuse that I'm "making dinner". Sorry honey, can't watch the kid I have to take care of dinner.

Mexican Spaghetti. Heart attack on a plate.

Cook spaghetti.
Cook chicken breasts and cut into bite size pieces.
Melt the following in a sauce pan: 1/2 lb Velveeta, 1 can of Rotel, 1 can each Cream of Chicken, Cream of Mushroom, Cream of Celery soups.
Mix in casserole dish and bake at 350 for 45-60 minutes.

Works very well as make ahead dish - freeze and heat later.

Tip, get the dry double smoked polish sausage instead of your grilling kielbasa if you can.

The vegetarian version is made with prunes and dried mushrooms - I put those into the meat version for extra dankness.

I have never heard of Bigos and upon reading your post and responses, checked out recipes on line. Sounds great and got rave reviews.

I will absolutely try this.

While we are on the subject of stews, I love this one:


The combination of chorizo, ham, beans, sweet potatoes, mango, etc sounds a little weird...but it absolutely works. I usually add some cumin to it.

Note that the cooking times are off on this recipe. The potatoes take way longer than this. Also, I usually add chicken to it.

I think I'm gonna make some tagine tomorrow post Bears Packers. Link above, but I change a decent amount to bring it to a different level. If anyone wants the recipe let me know and I will post it.

After reading about Bigos yesterday, I made it today. Turned out very tasty - even though the recipe said to eat it the next day, I had some today. I think I gained five pounds.

No one asked me for my tagine recipe, but I'm gonna give it to you fucks anyway. Shit is good. I don't think you'll be disappointed. I had intended on making this last night, but I was irritated by the Packers loss so I ended up not doing it.

Here we go...

Ingredients:

- Two boneless skinless chicken breasts, cubed
- 3ish sweet potatoes cubed (depends on the size). If they are monsters maybe 2.
- Two carrots sliced into decent sized chunks
- 1 can of chickpeas, drained and rinsed
- 1 can of diced tomatoes, with the juice
- 1 can of chicken broth
- One onion finely chopped
- 4 or 5 cloves of garlic, minced. I normally use a garlic press to make this super easy
- 1tb sugar
- 1tsp salt
- 1/2 tsp black pepper
- 1 tsp coriander
- A few dashes of cayenne
- 1 tsp garlic powder
- 1/4 tsp cinnamon
- 1 tsp tumeric
- 1 tsp curry powder
- 1 tsp cumin

Instructions:

Get a big ol dutch oven and put a little olive oil in there. Maybe 1-2 tbs. Set the temp to medium high until the oil comes up to heat. Put the onion in there and cook until almost translucent. Salt and pepper the chicken breast cubes and add. Cook until almost done, stirring frequently. Add the garlic cloves, until fragrant. Maybe 30s - 1 minute. Add in the chicken broth, diced tomatoes, seasonings, carrots, chickpeas and sweet potatoes. Bring to a boil. Drop heat to a simmer and stir occasionally. You'll know it's done when everything gets nice and thick as the starch releases from the sweet potatoes. Probably like an hour, maybe a little less.

Serve with couscous, rice, or naan. Or both rice and naan if you don't give a **** about carbs. I don't think I missed anything but I may edit this later.

Your house will smell wonderful.

Other ways to punch this up - fresh cilantro, more heat with peppers, crushed cashews, dried fruit (apricots, raisins, etc).

Sounds awesome. I am on a tagine timeout ever since returning from Marrakech, ate for a tagine every lunch and dinner over and again.

Btw, if you’re thinking of vacationing in Marrakech, don’t bother. There are some cool aspect to it, but worldwide there are countless places that IMO are far more desirable.

I was gonna ask u where the dried fruit was until u slightly mentioned it at the end. Dank recipe tho. I imagine the sweet potatoes makes up for the lack of golden raisins or dried apricots.
