It's also pumped full of drugs to keep them alive. That could affect the taste. Or the environment that they are slaughtered in. When they get scared they release adrenalin, which affects the taste of the meat also.

The fat content in a grass finished bison or beef filet isn't what makes it flavorful, to me at least. It's about the meat itself. 2 high is why I'll never(hopefully) eat shitty large supermarket meats again.
