The only way I can in my imitation palatial kitchen, in a pan. I will try sous vide at some point, but I was so anxious to eat them that I just went the easy route.

Why have I never had this cut of steak before?
It is hard to find. There is only so much of that per animal

A lot of flavour. And it wasn't very expensive, in relation to rib steaks and strip loins. Will buy again.

If u go to a good steakhouse they will bring out your meat still blue (even on the outside) and let u pick the steak you will be eating.
I've never tried that in Iowa, tbh. Probably because I never go to steakhouses on my own dime. I go to this place in Houston called Pappas Bros that has their steaks on display in a case for you to choose from. One of my go-to's when in town.

There's a grass fed, organic butcher shop just opened last year around the corner from me called Pasture to Plate. The guy there set me up with my first hanger steak. One word: OMG!!

Before the internet few people knew about the hanger steak, it was called the butchers steak or cut because they kept that for themselves. The secret is out now, and butchers are saying "thanks internet".

Ribeye
Flank
Porterhouse
Strip
Sirloin

Also, I don’t order steaks at restaurants anymore unless it’s a high end steak joint (which only happens on the rare occasion for business meetings)
The wifey complains that going out to eat steak is always a let down because the ones we make at home are better.

It's funny, because it was a butcher who let me in on the secret. But it was not a cut he had on display, so I must have said the right things. I am now hooked on this place, and will be spending twice as much for my steaks than I used to. Which is probably good because my red meat intake has been a bit too high the last couple of years.

I've been doing Hanger steaks for a few years, inexpensive and very good...not always available though.

I've never seen a hanger steak in the display case of any butcher shop or grocery store, never seen them on sale or even mentioned in adds or anything else. I was in a butcher shop I go regularly, we are on a first name basis, I ask him for two hanger steaks, he shoots right back they don't have any, I smile and ask if he wants to check in the back, he just smiles and shrugs his shoulders like, sorry man, they are spoken for.

Over the years I've literally spent thousands at his shop, and he usually delivers on the hangers, but that day it was "no hangers for you".

@Spunky where do you get them? You got a hanger guy?

I went to this nice restaurant in Fargo last year and paid 50 bux for an Elk steak. Hands down, best steak I've ever eaten. It was incredible.

In terms of different cuts, I know a popular one is Ribeye, but I'd much rather have a NY Strip. Ribeye's are okay if I get to pick them out myself from the store, but if I go to a restaurant and pay 25-30 bux for a Ribeye and half of it ends up being fat, I'm going to be upset. Maybe next time I get a Ribeye from a restaurant, I'll just ask for it well done.

I'm with you on this. Never tried an Elk steak but I'll keep an eye out for a chance.

Only a millennial would complain about fat on a steak, order an Elk steak that he didn't kill himself, and say he'd much rather have a NY Strip.

Unless he is breaking down the beef in house, he can likely order them (hangers) from one of his wholesalers.

Yes and I have never once cut a piece of my steak and forced anyone to look at it

But if you went out to eat and found yourself at the same table as Brett05, wouldn't it be best/easiest to say "Looking at your food makes me quesy" and then excuse yourself from the table? Like Indiana Jones Temple of Doom?

Sorry but I'm not seeing the "troll" here. I agree with @gpphat that it's super weird to ask people at your table if you can order something for yourself to eat. I mean, are you grabbing steaks with a group of vegans????

Best steak I have ever had is the Chateaubriand at Bern's Steak House. If you are ever in Tampa that has to be a stop. Everything they have is amazing, I think they have they largest privately owned wine collection in the US. When you finish your meal you can go on a tour of the kitchen and the wine cellar, then they will take you to the upstairs area where you can get dessert and coffee or after dinner drink. Not only is the meal amazing, but it is a full on experience.
