I was turned on to the beet kvass, cider vinegar, fermented veggies deal a while ago, being on the west coast. What do you use to begin the process hateme, whey, more salt or something else?
Speaking of fermentation, anyone tried chou doufu (stinky tofu)? Smells like moldy, sweaty socks or hockey equipment, but tastes pretty good actually. The durian of fried foods. Kimchi and chou doufu lunch prior to a big date.
