My daughter bought me a pressure cooker back in April.

I had been traveling for work and when home, my kids are often at work, and I just haven’t cooked at home very often, and haven’t had opportunity-or haven’t taken advantage of my opportunity-to use it often.

But I have used it for Italian Beef of all things, which I have always cooked long and slow. Ital Beef is a religion to me.

It turned out just as tender and flavorful in one hour as it did in crock pot in 8-10.

My daughter refers to her gift as “worst ever” due to me not using it much (which I feel terrible about). I will consider this a New year’s resolution: Use it more frequently!

That’s been on my radar for a while now. I think that will be on today’s menu. Thanks for mentioning.
It was amazingly flavorful. Best meal I've had in a long time.

My lazy ass didn't make the 1/2 mile trip to the store to get the necessary ingredients, so I made White Chili instead.

From frozen chicken to ready-to-eat in under an hour. And every bit as good as the times I cooked it on the stove for hours.

I made the Orange Chicken recipe someone posted earlier on in this thread and it is incredible, mouthwateringly flavorful.

It was amazingly flavorful. Best meal I've had in a long time.

I made the Coq au Vin last week and it turned out well in spite of the fact I was bouncing between two very different recipes.

I had one that was more traditional and called for red wine, and included onions. The other which was for Instant Pot, called for white wine, and no onion.

Long story short, I was bouncing back and forth and trying to use ingredients from one and cooking instructions for the other. When I finished I had never included the flour and improvised a bit as I went. But it was still good.

Before I try it again, I will find an Instant Pot version with the ingredients I want and be better prepared before I start.

I did a lot of cooking outside the pressure cooker, which was unexpected. But it was still pretty good!

We made gumbo in the instant pot last night - shrimp and chicken andouille sausage. I made a roux separately.

It was ok, not great. The base sort of ended up like creamy tomato soup. A little file powder would have helped but overall I'd just go with a different recipe if I did it again.

I just googled "file powder" because I couldn't stand that there was an ingredient or technique I was not aware of.

Oh, filé powder, okay crisis averted. That recipe looks great, bacon, onions, garlic, mushrooms, and apparently some chicken. We don't have an Insta Pot, just an old school pressure cooker, but I bookmarked that.
