I too am working on the same thing. But minus the sous vide part. But definitely please share. I've gotten some decent fake dry age results by bringing up to room temp, getting the steak really dry patting with paper towels, then moving to a rack in the freezer, coated with sea salt and some corn starch. Then brushing that off, letting come up to room temp again, dry off, then reseasoning with some coarse ground pepper and salt. Put it on a hot as **** grill. Flip only once.I am convinced there is a dry age, soux vide, grill procedure that will give birth to the worlds best tasting steak. I will let you know when its perfected.
