I'm all of the above too :) minus the sous vide part...still need to get one of those

I am convinced there is a dry age, soux vide, grill procedure that will give birth to the worlds best tasting steak. I will let you know when its perfected.

I too am working on the same thing. But minus the sous vide part. But definitely please share. I've gotten some decent fake dry age results by bringing up to room temp, getting the steak really dry patting with paper towels, then moving to a rack in the freezer, coated with sea salt and some corn starch. Then brushing that off, letting come up to room temp again, dry off, then reseasoning with some coarse ground pepper and salt. Put it on a hot as **** grill. Flip only once.

That's how I've done it before getting the sous vide.

Yeah, but sometimes super hot grill with some hardwood (no charcoal)
I've been raising my grill surface with some foil wrapped bricks to get the heat super close to the meat. Works. At least in the absence of a 1000 degree salamander.

This guy and his henchmen are out there, but he has answers for every question you guys have asked, from home dry aging, to searing.

On his other channel he shows home dry aging, I never done this so this is not a recommendation. He does some crazy shit like 90 day dry aging, which apparently sucked, he posts his successes and his failures. I have seen other places that 45 days is about right, 50 and later starts getting nasty.
