1) Why indirect? I've had no issues with Italian Sausage on direct.

I grilled anyways.Was gonna grill some burgers last night with a few of my friends, but then it rained. I was a sad panda.

I never have a moisture problem with my Italian, but hey, why not try something new?
I've halved larger ones to smoke them quicker. Never grilled them.So lately i've been cutting pork butt into steaks to smoke/grill. anyone else do this?
Steak 3 days in a row.
