I think that it's pretty SUS that somehow soul food restaurants 20 years ago that @Angry Boomer "frequented" decided to serve fried chicken, but refused to use the wings. I've also never seen in any decade,, any store selling whole chickens minus the wings, or any place that serves fried/baked chicken, only offering thighs/breasts and legs.

Coming from a family who owned a restaurant in the 70's, 80's, and 90's, back then you did not throw away product that could be sold. I know the concept of basic economics and business is lost on someone who would drive hours to a bowling alley to a gig to only lose money. But I would imagine any restaurant that is serving every other part of the chicken would not consider just throwing away a part that can be sold for profits.
It's like going to McDonalds, ordering the combo meal and throwing away the fries.
