Simmered on low in beer, butter, a bunch of onion, black pepper, crushed reds, garlic. Pull from that, and brown on charcoal. Let the onion mixture simmer, and add some cornstarch + water to thicken up the onion sauce a bit. Toast bunz on grill, top with onions and mustard.

brat tubs are the best and really not that much work when you consider you are making more than just a brat.
My brat tub:
Onion, shredded cabbage, diced bacon (only home cured nowadays and half inch cubes, sauteed) Maybe diced potato if this becomes some sort of braised side dish, if not it's topping the brats. add beef stock, beer and a dash of red wine vinegar, just to almost cover the veg, braise the brats nestled in that for 40 minutes, UNCOVERED so it doesn't get too smokey. After that grill the brats for a char. The brats turn out super juicy and charred on the outside.

Yes, you can pick it up and eat it with your hands, just like any good sandwich. Like I said before it meets every single requirement for a sandwich, even the ridiculous ones like a sandwich isn't a sandwich unless it has two pieces of bread....
