thats what i was thinking.I don't know shit about sous vide, but I'd guess seperate bags would probably help things cook more evenly. Shrug.

We do 130 degrees when doing steaks usually 2 1/2 hours. I don’t think two in one bag was the problem. Maybe just a bad steak?

to be fair to your comments, my MIL cooks a steak the real OG way and its always fantastic. She would probably join you in calling me out on my sous vide cooking.
I don't have to try it, I know how to cook a steak like a real man.
In decent weather I generally use the grill. Also sear on stove top and finish in the oven. Sous vide is pretty fool-proof and consistently good. Restaurants/Chefs use sous vide for a reason.

even with sous vide, i always finish on the grill. its the best steak ive ever had.
but again, my MIL can grill a steak to perfection without the sous vide method. she swears by delmonico's
