Chopping an onion is easy...

1 - Make sure your knife is really sharp
2 - Cut off the end of the onion, not on the root ball side of it.
3 - Slice it in half
4 - Peel off the top layer
5 - Put the flat sliced side down on the cutting board so you have a stable base to work from
6 - Make a series of horizontal cuts across the onion, from the bottom to the top. Don't cut all the way back. You want it to stay together.
7 - Make some vertical cuts from left to right. Again, don't cut all the way to the back.
8 - Grab the onion with your hand. Tuck your fingertips back.
9 - Use the front of your fingers as a guide for the knife.
10 - Chop down and slowly slide your fingers back as you move towards the root ball.

I'm probably making it sound more complicated than it is. But once you do it a few times, you will be able to chop the shit out of an onion very quickly.

Just watched the Gordon Ramsey video. Think he did the vertical cuts first. Doesn't look too bad if I can figure out how to use that guiding technique without slicing my fingers lol.

No, you'd have half a root ball on both pieces, still holding it all together. nvan needs to make you a vid.

No, I get it. I wondered about that.

I do it similarly, but I leave the onion whole and make my cuts sideways toward the root ball. I like the idea of having the flat side hold it in place, however.

Just watched a youtube vid comparing all three: sous vide, reverse sear, and frozen. The chef admitted he was disappointed to report that frozen was the winner "hands down".

He said he was hoping it would be Reverse sear, but that was 3rd in his opinion.

Leaving the root ball on, and cutting it in half is not clear. You'd have a root ball only on one of two pieces.

The root ball is the end that looks like it has hair, tiny roots. Think of it as that is the side to keep because you want to keep your hair, cut off the other end. Two pieces with root ball if you cut pole to pole, cut along the equator, than you have root ball on one side. Pole to pole having a root ball on both halfs helps the onion hold together better IMO.

I get what you're trying to say, as I do this. But your wording makes it confusing. Putting the flat side down and cutting "from bottom to top" is confusing.

Leaving the root ball on, and cutting it in half is not clear. You'd have a root ball only on one of two pieces.

Just eating first meal today. Kids kept me busy(Why so many days off from school?). Having 2 grass-fed cheeseburgers and 4 cups broccoli with 1/2 stick of butter and some cheese.

Yep. And the cheese adds fat too. And if you want more fat from the burger you just buy the less lean, higher fat ones.

I don’t usually have much cheese but these burgers be leaner and feeling like cheese tonight.
