I made another giant pan of roasted vegetables. Pretty similar to the last time, but added in squash and zucchini, and went heavier on the crushed red pepper. Spiced, steamed shrimp was the protein. Made some whole grain orzo for the grain, and tossed it with the roasted vegetables. Fresh lemon juice and grated parm on top. Not too bad.

ahhh OK..They look great....I meant some frozen White Castles I made last night...No WC restaurants down here..We get em frozen at the Supermarket

I've been on a big Mediterranean diet kick the last few weeks. I'm not trying to drop weight, but starting to try and eat in a way that's a little more healthy. I really enjoy cooking and eating good food, so it has been a good fit so far. Lots of vegetables, whole grains, seafood, and lean meat.

Today I made some small pizzas on whole grain pita. Spread some basil pesto on the pita, topped with baby spinach / arugula, chopped tomato blend, portabella mushrooms, salt / pepper/ crushed red pepper, feta / grated parmesan cheese, and drizzled with olive oil. Baked for like 12 mins at 350. Damn good.

Greek salad. Chopped cucumber, tomato, red onion, green pepper, kalamata olives, seasoned with a little salt and oregeno. Tossed in olive oil and balsamic vinegar. Instead of getting the crumbled feta, bought a block of it and diced it up. So much better. Snagged a rotisserie chicken from the local deli for a protein on the side, along with some whole wheat pita and hummus. Should have enough to do the same thing for lunch tomorrow.

I had some steel cut oats I made last night, for breakfast.

Added 2 TBS of peanut butter and 1 TBS of honey.

Should have cooked the oats longer.

For lunch I had my meal-prepped chicken/veggies.

I marinaded 2 chicken breasts on Sunday and then baked in the oven, cut in half, so half a breast per meal container.

Then I cut up 2 green peppers, saute'd some garlic and carrot chips, then added in the green peppers so it could all cook down together.

Again should have cooked longer, but was still ok.

Ate one container of that for lunch just now.
