Where do you find fresh Cod, I only see frozen?
That was probably a poor choice of words, it was more than likely previously frozen, but it was wild caught and laying on ice when I bought it. Hell, even the super fresh stuff that gets caught locally I get from my local fish monger is often cleaned on the Port Canaveral docks and immediately flash frozen. Which, according to him is the best way to preserve quality. Sometimes though I buy a whole fish and fillet myself, I don't think those are ever frozen. Just thrown in ice immediately.

The "freshest" stuff I eat are the ones I catch myself and immediately clean and cook the same day.

Dinner tonight. I deviated away from typical Mediterranean food, but the principles of balance of ingredients remained intact (healthy fats, lots of vegetables, whole grains, etc).

Made some black bean soft tacos. Sauteed some onion and garlic in olive oil, added black beans, diced tomatoes, and green chilis. Seasoned with salt, pepper, chili powder, cumin, cayenne, garlic powder and oregeno.

Served on whole wheat tortillas with sliced avocado. Everyone else added some shredded cheese and sour cream.

Some fruit for "dessert".

Really good, cheap, easy, and pretty damn healthy.

Anyone have steel cut oatmeal recipes/tips?

I am making small batches the evening before work days, keeping it in small tupperware overnight and heat it up in the office for breakfast.

I been just cooking based on stock directions.... 1/4 cup of oats with 3/4 cup of water for 5-7 mins.

Then I add some peanut butter and a little bit of honey.

It was a fair question. I'm pretty sure cod is a cold water fish, so the stuff I'm buying was almost certainly frozen at one point. I don't think we even have them down here, I definitely have never caught one (but I mostly do inshore stuff). Lots of great species for sport and food for sure, but that isn't one of them.

I misspoke. See how easy it is to admit when you screw up B&I?

Fuji is great, but Ambrosia is my favourite.

I like Granny Smith apples.

Gala apple, great and cheap at Costco.

I used to think so as well, then i discovered the Honeycrisp. /endApplethread

Yeah man, honeycrisps are great.

All of these listed are decent apples, but are all far inferior to the Fuji. There literally is no debate on this

I've never had one, going shopping Friday, if I see them I'll buy them and report back, if I like them I will say something like:

"Mmm, this is a tasty apple! Vincent, you ever had a Fuji apple?"

Leftover bolognese, but it really isn't bolognese, it's a tomato gravy with meat. I go out to eat and they bring me something that isn't what it's advertised to be. Still alright, but not bolognese.

I've become a big fan of single sheet pan dinners. Healthy, easy, and there are almost infinite ways you can mix it up with different proteins, vegetables, spices, etc.

Tonight I chopped up some zucchini, squash, red onion, red pepper, yellow pepper and 4 chicken breasts and threw them on the baking sheet.

In a seperate bowl I mixed some lemon juice, olive oil, a bunch of fresh minced garlic, salt, pepper and oregeno. Poured that over the chicken and vegetables, and mixed it all together really well. Baked for about 25 minutes at 400.

When serving, put it all in a shallow bowl, squeezed with more fresh lemon, and topped with some feta cheese. Not too bad.
