I don't eat red meat super often, but when I do I try and make the most out of it.

Tonight I grilled some bone in rib eyes, seasoned with course ground pepper and salt. That's it. Cooked hot and fast over charcoal, medium rare. I put some bricks under the grate to raise the heating surface up to get a better sear. Also let them come up to room temp before putting on the grill, and patted them dry prior to seasoning. That helps too.

Sides...Made a ceasar salad with fresh shaved parm and homemade dressing. Squash and zucchini sliced into 1/4" pieces, sauteed in some olive oil, garlic and lightly seasoned. Loaded baked potatoes with butter, cheddar, sour cream and some bacon crumbles. Not the bullshit in a container, actual bacon.

Now I'm drinking a Jai Alai and smoking a cigar. Not a bad lazy Saturday afternoon / evening.

Having my first meal of the day right now. Pretty much a staple, give or take. Went a bit heavy on the bacon cause there were 7 slices left in the pack so, what the hell, might as well have all of that. Trick is to cook that bacon first cause gonna want to use the ample amount of fat it leaves in the pan to cook the scrambled eggs with, of which I always have 6, never 5 nor 7. Must be 6. A bullet proof coffee to go with it all and I'm just about ready for 7 hours of commercial free football followed by the Bears game.

Had a pretty common (for me) keto lunch today: cabbage sauteed in chicken fat and lightly salted, and kielbasa with melted cheddar on it.

Speaking of hot dogs, I bought some princes canned hot dogs off of ebay to try. They were not good. Vienna Sausages put them to shame. BUT im eating the another can pregame.

Edit: maybe it was amazon. i forget. regardless, pass!

Why would anyone eat a canned hot dog. Are normal hot dogs not available in your area?

I order canned and other processed packaged foods from around the world to try. Mres, canned, powdered, sauces, other dry goods etc. Some familiar sounding stuff and others, not so much.

So we've got a cooler full of snapper that we're going to pan fry with blackened seasoning tomorrow, so there's one clear choice to accompany that...mango salsa.

Super easy, but god damn delicious. Fresh cubed mango, red onion, tomato, avocado, jalepeno, cilantro, red pepper, lime juice and a little salt. Making a big batch of that, plus some Caribbean rice.

We're also gonna fry some gator tail with some dips. There's a ton of it. Dips will be something creamy and chipotle based, along with some sweet chili sauce. But the best way to eat it is with fresh lemon IMO. If you cook it right, that's all you need.

Really looking forward to tomorrow. Hanging out with awesome people, eating great food, knocking down some beers, perfect weather. Can't really complain.
