My turkey wasnt ready yet, so will eat that tonight with some mashed potatoes, broccoli au gratin, and some lemon and Parmesan asparagus.

So, instead of that, I ate a roast beef sandwich for lunch that was pretty delish. Good roast beef.

I had leftover corned beef hash made with leftover fatty corned beef, some diced red potato and leek, smothered in Kerrygold cheddar. Was really pretty awesome I must say...

Made a ton of that for my last day Sunday. Also made corned beef, bacon, and sausage gravy. And a omelet with onion, bell peppers, tomatoes, corned beef, and mashed potatoes for St. Paddys. sold the **** out of that omelet.

Oh, and how! I love apples myself. In fact, I used to work in an apple orchard near the turn of the century (21st). I rather enjoyed that job -- sunshine, fresh air and all the apples a guy could eat! Ahh... simpler times.

Cool, more for me. Plus, I didn't say they were my favorite. I like all kinds of apples, although I like Ambrosia over the ones you listed.

Last resort today, Chinese takeout (although this place is pretty great: White meat chicken in a black bean sauce - extra spicy, brown rice. water. A high carb lunch for a change, but damn tasty.
