I've had some professional cherry BBQ before, and I wasn't too impressed for some reaosn, came out too sweet, which is strange because I like sweet with a kick of an aftertaste. I just think maybe it was too much cherry or something. Would love to see your recipes, I'm not usually a fan of jerk but in a bbq sauce it might be ok.. I would ask you how hot they are but you haven't made them! hah.
I just only recently received them, but from what Ive read in the recipe, its more of a balance of sweetness and spice. Its a very interesting recipe indeed.
