I made chili last weekend (still working on it) my current recipe:
2 lbs of stew meat (I usually have to go through it and cut it to be uniform)
20 oz of Chorizo
1 Large Onion
4 cans Black Beans (beans go in chili you fucking monsters)
1 Pablano
1 Anaheim
1 Serano
1 can green chilis NOT strained
Cumin
Chili Powder
Salt
Pepper
Cinnamon
Unsweatened cocoa powder
Brown sugar (for sauteing the onion)
Stout beer (whatever looks good)
I've been messing with my pepper mix lately and I like this better than what I had it at before.
I saute my onion first in olive oil and add a bit of brown sugar to cut the acidity and bitterness, once those are clarified I add in the can of green chilis, again, not strained.
I let those cook together for a bit, while that's happening I roast my peppers, used to have a gas range and I'd just do it on that, but now I have to use a shitty oven broiler, oh well.
Once the peppers are roasted I throw those into pot. A few minutes after that the stew meat goes in with some salt and pepper. As soon as the meat is evenly browned the chorizo goes in.
Once all that mix is cooked together I add the beans, the rest of the spices (I still don't have the ratio perfect, but with the chorizo you don't need a ton of any of the spices really), and then the beer as needed. Let that shit cook together over a low heat for as long as you can stand it and then go to town.
