I have more of an issue with sour cream, cheddar cheese, hotdog, pasta, or cornbread being needed for chili than beans in the chili.

Chili needs to stand on it's own.

I'm probably gonna try and make a hotter version sometime. Normally a 5 yr old is eating it too, so I keep it pretty tame.

Also, your chili verde recipe sounds awesome. Gonna give that a whirl at some point.

Without getting into the whole bean debate, here is my recipe:

1lb lean ground beef
1lb ground italian sausage
1 29 oz can tomato sauce
2 14 oz cans diced tomatoes (or one big one)
½ a beer (usually whatever I have on hand)
1 large onion chopped
3-4 stalks of celery chopped
1 green bell pepper chopped
1/3 C chili powder
4 tsp ground cumin
3 tsp garlic powder
½ tsp salt
½ tsp ground black pepper
1 tsp dried oregano
1 tsp white sugar
¼ tsp ground cayenne pepper (or omit / add more depending on how much heat you like)
1 can light red kidney beans, rinsed and drained
1 can dark red kidney beans, rinsed and drained
1 small can of green chilies

Brown the meat, crumble and drain.

Put everything in a big pot. Bring to a boil. Reduce heat, simmer covered for an hour or so, stirring occasionally.

I made chili last weekend (still working on it) my current recipe:

2 lbs of stew meat (I usually have to go through it and cut it to be uniform)
20 oz of Chorizo
1 Large Onion
4 cans Black Beans (beans go in chili you fucking monsters)
1 Pablano
1 Anaheim
1 Serano
1 can green chilis NOT strained
Cumin
Chili Powder
Salt
Pepper
Cinnamon
Unsweatened cocoa powder
Brown sugar (for sauteing the onion)
Stout beer (whatever looks good)

I've been messing with my pepper mix lately and I like this better than what I had it at before.

I saute my onion first in olive oil and add a bit of brown sugar to cut the acidity and bitterness, once those are clarified I add in the can of green chilis, again, not strained.

I let those cook together for a bit, while that's happening I roast my peppers, used to have a gas range and I'd just do it on that, but now I have to use a shitty oven broiler, oh well.

Once the peppers are roasted I throw those into pot. A few minutes after that the stew meat goes in with some salt and pepper. As soon as the meat is evenly browned the chorizo goes in.

Once all that mix is cooked together I add the beans, the rest of the spices (I still don't have the ratio perfect, but with the chorizo you don't need a ton of any of the spices really), and then the beer as needed. Let that shit cook together over a low heat for as long as you can stand it and then go to town.

Chili round 2. Have a bunch left over, so I'm gonna make some burritos. Fritos + chili + shredded cheese + a little sour cream + hot sauce + a tortilla = magic.

With red chili I load it up with cheese and saltines. When I was a kid I would make that shit a thick mess. I'm not as bad now.

I finally got to handle my chili craving.

2 lbs ground elk meat
1 red onion
1 jalapeño pepper
1 serano pepper
1 anaheim pepper
5 cloves of garlic
1 can of black beans
1 can of chili beans
1 can of crushed tomatoes
1 can of tomato sauce
1 tiny can of tomato paste
2 tablespoons-ish garlic serano pepper sauce from high altitude gourmet (Google it, fo' real)
1 shitload of spices to taste

Saute veggies in olive oil
Throw in meat and brown
Add beans, tomato stuff, & spices
Simmer for a while
Shovel into face. Be careful, that shit is still hot


At the end of the summer I'm going to experiment with some super-hot peppers. Some friends of mine are growing habanero, ghost chili, & carolina reaper peppers. Probably only a half of a pepper in a big pot but it should be good. Hopefully I don't blow my asshole out on the first bite
