Crock pot corned beef dinner.

Layer of chunked carrot and WHOLE RADISHES. sliced onion, bay leaf. Top with a corned beef brisket, slather spice packet on that, wedges of cabbage on that. Cover for 6 hours. No liquid! The brisket will give off the braising juices. If u dont believe me or your crock runs hot pour a tiny bit of stock in there. Turns out perfect.

RADISHES are the best part.

One thing I have learned about crock pot cooking is that 99% of recipes are soggy with stock.

A lot of your recipes sound great. Gonna try that crockpot Corned Beef. A buddy and I were reminicising about "staples" that our poor parents made for us growing up, that we may or may not have thought were awesome.

My Mom (RIP) would make this once a week. Called it Italian Night. She boil and soften up some ridiculously cheap wide egg noodles. Strain it, and then throw it in a pan with diced bacon, onion and a bunch of pepper. She would fry it all together with a pat of butter. It would be rubbery, crunchy, salty and spicy. And, like a good child in the 80s and 90s I'd douse the MOFO with too much ketchup.

Damn, those were the days.

Off topic in my own thread, but I think I might pick up another turkey post Thanksgiving and smoke it. They are cheap af right now. Might as well. Never done it before, but I'm sure some googling / youtubeing could get me pointed towards a solid result.

I smoke for 1-1.5 hours then go to 350-375 to cook and attempt to get the desired crispy skin.

If you brine you're going to struggle to get crispy skin on the smoker.... Better to stuff butter under the skin and use some mustard and a dry rub on the outside.

Just my .02, came out delicious and juicy after brining and smoking but the skin was a little rubbery.

This post made me incredibly happy for some reason. I think it's your memories of your mom doing the best she could, and you reflecting fondly about that

This is a Stoopid staple, but one that is always on hand in case I need a quick bite and cannot find anything I'm interested in eating.

Crunchy peanut butter, slather on tortilla, roll up, consume. Best with a glass of milk.
