My dad cooked every night while I was growing up. We always had dinner together with the whole fam. I now always wait for my wife to get home to eat together. I’d say 75% of our meals are prepared from scratch and we eat out the rest of the time

We'll eat together maybe once or twice a week. It's more of an eat what you want, when you want type thing cause not everybody wants to eat the same thing at the same time. I go heavy on the meats, steak and salmon being my staples so when the kids see me cooking they might want some so I do it for them. My oldest daughter decided she wanted to be gluten free when she was 13 and has cooked for herself since then, usually some stir fried veggies, eggs or chicken to put in a salad. This encouraged her younger siblings to also learn to cook for themselves. Been easier that way. They all take care of breakfast and lunch for themselves and the wife or I usually do some sort of dinner for them or they'll do that themselves too if they don't like what's on the menu or don't want to eat til after their basketball/football practice.

Sundays are my day for crock pot meals. Low effort and you get a few meals out of it. Today I'm making white chicken chili. I make this probably 3-5ish times every winter.

- 1 can green enchilada sauce
- Great white northern beans
- 1 can Fire roasted corn
- 2 cans green chiles (i always do hot)
- 1 jalepeno
- 1 yellow onion - diced
- 1 lb. boneless chicken thighs or breasts
- Variety of spices (I usually always do something a bit different and it involves oregano, chili powder, cumin, paprika, salt/pepper)
- 2 C chicken stock or broth
- package of cream cheese
- toppings can include sour cream, cilantro, cheese, tortilla strips (I use an avocado and cheese for my topping)

Dump everything in except cream cheese. Cook until chicken shreds easily usually 4ish hours on high. Dump in the cream cheese (i cut it up or soften it) and cook until it melts.

Just threw @nvanprooyen's recipe into the over. I hope you don't mind, but I put some parmesan into the potato mix, and threw some vidalias on top of the potato layer before putting the fish on there.

Probably not what nvan had in mind, but here's something I make at least once a winter. You need a dutch oven for this:

It's fucking money. Yeah, probably cheating without making it "my own" recipe, but it's great. I like to throw it on top of some mashed potatoes, or a risotto that I'll make along side of this.

Let me know how it comes out! Your substitutions sound really good, as long as the onion was cooked a bit before adding them. Otherwise I think the fish will finish way quicker than the onions.

I did not cook the onion prior, and I'm finding that they overpower everything else. I think if I were to do it again, I'd add the onions into the potatoes from the start.

If you want to add onions, what I'd do is cook them in a small skillet with bit of butter or olive oil until about halfway done. Not quite translucent, but a little softer than raw. Maybe 3-4 mins on medium high heat. Then add to the potato / garlic mixture and proceed as normal. Salting and peppering that adequately is really key. And lots of lemon.

45 - 50 min @ 425

Split em open and top with Quinoa, sauteed veggies (usually an onion/bell pepper), corn and black beans. Sprinkle on some hot sauce. Easy meal.

Edit: Topped with an Avocado

I actually only freeze meat and green chile so I'm not sure what your beef is about...

I actually only freeze meat and green chile so I'm not sure what your beef is about...
