I shared in here somewhere my tobassco story with Famous Dave's
Yes, the vinegar overpowers the flavor
It's literally part of the intended flavor.
Except no matter where it is in the ingredient list it overpowers the sauce.
Glad you like it, I don't.
For me and many the taste of the non-vinegar ones are just better. Rare to find, but better.
I got this real good green habenero sauce at the local Mexican market. Love it.
Thought about even going further and giving ghost pepper sauce a shot, but just really want a damn good hot sauce/ spice that’s your go to.
What’s your fav?
How can it "overpower the sauce" when it's literally central to the flavor profile?

EDIT: I can take it when it's not in the top 3 or 4 but some even then it's just too strong.
Perhaps I have an ability to detect it more than other things. I don't know.
but the #1 ingredient in a hot sauce should be what's first in the profile for me.
Vinegar is listed third in Tabasco. Guess which one is first?
Must make it simple to be dogmatic about everything in life, from bacon to vinegar in hot sauces.
I'm boiling chicken leg quarters in apple cider vinegar here shortly, only for 10 minute boil. Love that vinegar taste, then im going to smoke them for about 30 minutes. I just so love that vinegar taste. Ok carry on

And there's nothing wrong with folks that do.
Just like there is nothing wrong with ketchup on a hot dog. Just don't call it a Chicago Dog.
I don't like vinegar. Most folks I associate with make homemade and ithey have none.
Literally incorrect.
I'll admit, I prefer hot sauces with a less vinegary profile also
