It's very good and also very hot.

I highly recommend these. They've gotten milder since WalMart picked them up a year or so ago, but they are fantastic chips.

When I order ceviche and find out they put lime juice in it I send it back. Takes away from the raw fish flavor.

Um, you know by definition, ceviche is cured with citrus, right? So when you do that you look like an uneducated jerk, right?

Yes, any of the vinegar based ones. They are awful.

Okay, seriously, to each their own of course...but yeah, when you want a mild nip of heat and a sauce that doesn't need technology to preserve it...Tabasco is king--the REAL original Tabasco sauce, not the additional varieties like Chipotle, Jalapeno, etc. The stuff that's just Tabasco peppers, vinegar, and salt.

...now if you're looking for pure heat to kick up a dish and no vinegar...try this:

I got this real good green habenero sauce at the local Mexican market. Love it.

Thought about even going further and giving ghost pepper sauce a shot, but just really want a damn good hot sauce/ spice that’s your go to.

What’s your fav?

Wow, five pages and I'd say you missed an important one.

In my fridge the following four are always there:

Siracha
Tapatio
Cholula

And the one that I think you all missed Valentina Extra Hot.

Of course I have gone through some Melindas and most of the other store bought bottles mentioned, but Valentina Extra hot is a damn fine hot sauce. Also Cholula and Siracha turned me off a bit with their pricing. They both used to be two bucks or less and now they want 5 per bottle. Tapatio and Valentina still have the best pricing of the popular ones. There are more showing up on the shelves though, and I would not be surprised to see two or three brands emerge as super popular replacements for these in the next few years.
