I think one of the criteria for something being a sandwich is the bread.

I'm just pointing out that Oreos used to be sold as sandwich cookies. It's a whole classification of cookies.

What if I only have one of the end pieces left out of the loaf of bread? I throw a couple of pieces of turkey on it and fold over to waste nothing...that is no longer a turkey sandwich?

If we disregard the fact that Lord Sandwich created the sandwich by using 2 pieces of bread, we throw the definition into complete chaos. Tortillas and pita are also bread. This would classify any Taco Bell product a sandwich.

Nah, those are flatbreads. You make more of a "wrap" with those.

In reference to the second point, what about a sub (or hoagie or hero or whatever) in which the bread isn't split? That's definitely a sandwich.

That's a good point, but Sub is just short for Submarine sandwich, so according to some since sandwich is in the name, it must be a sandwich. Also, a sub definitely fits into 1, which I think is the most important quality in defining a sandwich.
