The above is Cajun Spice, Texas Grill, Hickory Smoke, McCormick Rib Rub, McCormick Maple Bacon I combined it all together and the bag is the rub.

That rub sounds awesome. :clap:

Now they are on the grill. Four slabs of Baby Backs with a Slab of St. Louis. The only difference for the St. Louis Ribs is that I added McCromick Fiery seasoning to them. They are going to be my smoking hot ribs. When it's time to sauce, I'll show you what I do for a homemeade sauce to make them extra "firey"!!!

The pan below the ribs is filled with two cups of water to keep them moist thru smoking.

You thanked me before for it. If you have skill you can smoke with gas quite easily. You just need to practice at it. My ribs have been complimented by people who if they told me my ribs were awful I would understand as they are conosuiers of ribs

I likely thanked it because I like ribs. Smoking on gas is childs play compared to doing it over lump charcoal/actual wood IMO. I'm sure ribs off gas grills taste fine(They are BBQ'd ribs for fucks sake). But there is a reason every legit BBQ place in the world does it over wood/charcoal. The flavor is exponentially better over wood/charcoal.

So the wood chips I am using are a combination of mesquite, hickory, and apple.

I use heavy duty triple ply aluminum foil. Three sheets about the size of a square. I pile the chips in the middle and flod up all four ends leaving a square at the top fo rthe smoke to come out.

You gotta use heavy duty and I recommend triple sheets so the foil doesn't burn straight thru. Regular foil will burn fast even at the lown overall grill temp of 225-250

No, too expensive to have gas with wood if you can just do wood. Plus it is easier to do without gas.

Doing it over lump/wood is cake. It smokes quite easily. It's a ton harder to do with gas. Try it.

That said, I would love to have a charcoal grill still specifically for smoking. It's easier and less expensive for me that is.

Umm, it's actually not. Temperature maintenance etc is tougher over wood/lump.

Gas grilling/smoking is about as mindless as you can get. I've seen/been around gas smoking before. It's incredibly easy, boring, and requires virtually no skill.

The taste off actually wood/charcoal>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>gas. That's why when you go to competitions you don't see gas there. The flavor/art of it isn't even close.

Gas grilling is for when the wife wants some chicken breasts or something done easily on a weekday night. Charcoal grilling is for flavor/the art form on the weekend.

I live five blocks from a professional smoke house. You're outclassed here as usual.

Buy a cheap Brinkman Sportsman. Small, easy to use(relative to other charcoal set ups)

Again you missed cost. Heat temperature on coal/wood is not hard at all. get the same flavor as a wood/charcoal one because I use that in the smoking.

You are probably right, I should, but I want you know a competition one. I want to need a hitch. I want to be able to use branches and trunks so to speak. So for now, it's gas.

Find an old oil drum.

Clean and retrofit it. I'll post my set up Sunday.
