Turned off the valve to my propane tank, disconnected it from the grill and covered the grill up for the season today.

I live in a condo with a north-facing balcony and I can't have any outside lights. I've tried using a flashlight, but still can't see shit.

pork spareribs this coming fight night, will marinate starting thursday night.

the foil drip tray under the rack directly below the ribs works wonders. totally worth the extra time it takes to slow cook these bad boys.

also utilizing the top rack to create a waterfall effect of flowing juices. i learned a lot from this thread alone, thanks you guys

forecasting rain on saturday. i might be screwed. without a covered patio, its gonna be a b1tch to keep the temperature at the right level.

im hoping the the hack-weather forecasting here in socal is wrong as usual.

Last night at my dad's, I grilled a thick-as-your-wrist New York strip steak, cut into two pieces, for both of us.

this past thanksgiving i roasted a 7 pound bone-in ribeye roast in a nuwave oven.

inserted fresh crushed/sliced garlic into cuts along the top of the roast, dusted the whole thing off with garlic salt and ground black pepper.

20 minutes per side on full blast to sear the bark on the outside, re-dusted every turn.

after searing each side, sat it back on the ribs and cooked at medium heat for another hour and 15 min.

then i let it sit for another 15 minutes undisturbed to let the juices settle before cutting into it. ended with a medium-well finish, all gone in 20 minutes (15-person dinner party).

no time to take pics, after smelling the aroma for 2.5+ hours, pics were the last thing on my mind. that nuwave is pretty handy

I love grilling in winter, especially in the snow. Simply awesome.

Grilled a nice boneless pork chop*, marinated in some Italian salad dressing for dinner tonight.

*on my George Foreman grill

First attempt at beef ribs. Details and pics coming. Ribs been smoking two hours now. Looking for another 2-3 hours


tackled beef ribs for my first time earlier this year....smoked 'em for about 5 hours...they were legit.

Made my own rub for a beer-butt chicken I'm grilling this afternoon -- should be ohhh so awesome :) I may put the recipe in here lata.
