CHIT, totally 4got about this. Here's what I made this year:
VEGAN green bean "casserole" with Shishito peppers, wild mushrooms and MISO/Lemon Vinaigrette
olive oil
3 shallots, peeled and very thinly sliced into rings
2 tablespoons lemon juice
1 tablespoon miso paste
12 ounces haricot verts - I used frozen
3/4 teaspoon flaky sea salt
6 ounces shishito peppers
6 ounces hen-of-the-woods mushrooms, chopped to bite size
Chile flakes
french fried onions
In a cast iron pan, sautee shallot in oil set aside
in batches, blister the green beans, shishito peppers on high heat but don't overcook - you want them to have a snap to them
do the same with the mushrooms and sprinkle with some chile flakes. if you can't find hen of the woods use some other meaty wild mushroom
combine all of the veg into a big bowl and mix em up
whisk together the miso paste with the lemon juice and dress the veg with them.
when it's time to serve, heat all this up again in a pan on low, sprinkle with the finishing salt, and add in a can of the french fried onions reserving a handful to sprinkle on top for serving.
I made a quadruple batch of this for thanksgiving (50 people, potluck style) and it disappeared while the oldschool green bean casserole was leftover for people to take home

I'm going to be making my own Polish sausage . Polish sausage was always the ethnic food growing up in my house, mother being Polish, and the place we use to get it in Milwaukee, the guy had no kids that wanted to carry on the old European deli, so he got to old and closed down. I cant find anything close to what i had growing up, and living in northwest Wisconsin i have traveled to Minneapolis and St.Paul area. I Had some specially made from a place about an hour away. Just not the same. Also traveled Chicago, Rockford area, just cant find it. So i'm going to try it , dont seem to hard. Love garlic.

Pricey but honestly the best polish I have had outside of Chicago polish grocers on Western ave. U can get them at Costco.
That looks good but i think im looking for a white polish sausage. Nothing smoked.
