Made the odd decision to be a High Elf but I sure as shit love the +50 magicka bonus.
What's the easiest way to get better at smithing and sneaking?

make armor at the forges when you can. make sure you have the right elements to make shit.
sneaking, just always be in sneak mode when you are clearing out an area like a cave, stay hidden as long as you can and you will boost up

A little more about the smithing: Any armor shop you see, go buy all the iron ingots, iron ore, leather and leather strips. Use the smelter on the iron ore to make ingots, use the tanning rack to make leather strips out of leather. Then go make iron daggers until you can't make them anymore. They cost 1 iron ingot and 1 leather strip. If you have any leftover leather and leather strips, then go make leather helmets and bracers. One costs 1 leather strip and 2 leather, the other 2 leather strips and 1 leather.
Stores replenish their inventory every 48 hours. So you can just wait out side the store 48 hours and start again.
Also, if you want to cheat a bit, there's an exploit/glitch in the Black Briar Meadery in Riften that will give you 100 Speech by talking to the guy at the counter over and over again about Maven Black Briar. There's a "[Persuade]" option that never goes away and that boosts your Speech skill every time you use it. Speech is such a hassle to boost normally, so I usually cheat and use this glitch.

i saved multiple times, and stopped when arngeirs health was low, moved around and did it again. it was quick. the speech one takes a while.

It definitely is an acquired taste for some. Some people can't get into the fantasy thing, and honestly, I don't blame them. Most of the games that fit this same style are really lame. I absolutely love the Fallout franchise, though, which is made by the same company. If you really didn't care for Elder Scrolls, I'd give Fallout a try.

Yeah the Speech one takes about a half hour or so depending on your Speech level. When I do it I just change the input on my TV and watch ESPN or some show and just press X constantly, then flip it back over every once in a while to see where I am.
If it wasn't for that glitch, I'd be screwed because normally building up your Speech is such a hassle.

I just mute the TV and listen to music when I use that guy. My speech is at 66 right now.
Though that sneaking video will be quite helpful when I'm done w/ my dark brotherhood and thieves guild quests which I'm at the end of both of these storylines.
On another note, I <3 selling overpriced banish iron daggers to merchants
