Slow-cooker leftovers. Red curry beef, browned in coconut oil, then tossed into the crockpot along with garlic, ginger, kaffir lime leaves, lemongrass, Japanese eggplants, cumin, coriander, salt & pepper. nom nom.

Made a nice ground meat stuffing. Stuffing was full of onions, garlic, lean ground meat, some fresh parm, and a little fresh basil.

Took Squash and Zucchini split them open and dug out the center. Roasted them in a lil olive oil. Stuffed my mixture with them topped with season panko bread crumbs.

Finished with with a roasted red pepper beurre blanc.

I enjoyed it.

I've been meaning to make some pierogi for a while. Every time I start, my taste changes, and I wind up making croquettes. Mainly because decent pierogi are easy to come by, but decent croquettes are hard to find. Let alone good pierogi or good croquettes(at least not in any restaurant in modern Chicagoland). Both sharing 80% of the same concept and recipe, with a few changes and different procedure.

Get some pierogi from kasia's deli in ukrainian village. We also get dumplings from the korean supermarket at kimball and belmont and they are basically indistinguishable from pierogi (but good)

Hundreds year old family recipes and all that LOL! No, seriously, I'm super thankful for my babcia teaching me how, and her sister as well when I didn't quite grasp it the first few times. Downside, I'm a snob when it comes to polish food. But if you haven't noticed, most polish people are when it comes to buying premade stuff. Although everyone has their one place they might swear by, but IMO, those are backup plans for the real deal.

And, for anyone who orders them. pyeh-roh-ghee. Not PER-oH-gee. Same with kielbasa. It's not Q-basa. kyeh q Or you know, just say smoked sausage, dumplings.
