What we can all agree upon is placing A1 upon a steak is done by folks who don't like steak, am I right?

Or in cases where the steak you are eating is god awful.... my mom once bought half a cow with a co-worker and my Grams would pull the worst meat out of the freezer and make it.... round steak, cube steak.... I think she just made up names for the same shitty cut of meat.
We put A1 or ketchup on that junk.
Actual good steak... nah I don't need a sauce.

That's like people who think tobasco is the only hot sauce, when there is a whole world of awesome sauces. I don't put steak sauce on my steaks, but it doesn't bother me, actually once in a while I'm proud to admit that I'll use sauce and it will make a perfect steak better. What really sucks is eating something common the same way every time, no change.
They are different steaks. I could be wrong so I mean no offense, but it sounds like grandma didn't know how to cook those two cuts

She would literally just thaw them and fry them in a pan with no seasoning.
Hence something like A1 or Ketchup was needed..... she would never even season with S&P.... I mean I get the whole Great Depression simplicity thing, but how do you eat food with zero seasoning.

so round steak, pound with flour, then cook in a pan, makes a gravy as the same time cooking the steak. Low and slow and the stuff will be hard to eat with a fork it's so tender.
Cubed steak needs to be tenderizes vigorously. Again cooked slow. good with a side salad for me. But in fairness those are not classified by many as good cuts either.

Yes, it does. Chile con carne mostly likely originated in Texas on the cattle drives.

You are mixing up Texas Chili which I stand correct has Chili Peppers in it.
And Green Chile Which is a plant, as well as a concoction that is not Texas Chili.

Often times when we ask for Green Chile here we want the sauce not the stew.

Yes, I know about green chile. I've been to Hatch many times, eaten in Las Cruces and El Paso more times than I can count, ordered green or red or the occasional flag sauce. I'm not mixing anything up. Texas chili has chiles in it; they are red, part of the large family of chiles called "New Mexico."
